The easiest thing you can do is to buy a multiphone recording controller. It acts as a go-between between the phone line and the computer. It acts a a receiver for whatever signal is coming over the land line. The biggest problem is that ther's no leveling control, so if someone speaks too loudly, it'll make them sound horrible.
You may want to consider free VoIP services, like Gizmo, Skype in conjunction with Pamela, or Google Talk.
